Carol Eshleman is the Founder and Nutrition Consultant for Take 2. She
is certified as a Nutrition and Wellness Consultant through the
American Fitness Professional Association. Weight loss and nutrition is
something that Carol is extremely familiar with through winning her own
battle against obesity. Carol comes from a family plagued with weight
problems. Her grandmother went into a diabetic coma and died when Carol
was one, and two of her aunts died from complications of diabetes and
obesity, one at age 69 and one at age 64. Her aunt's husband also died
young not long after his leg was amputated due to diabetes. After the
birth of Carol's son, she had nearly reached 200 lbs, and she felt
fated to the same untimely demise as the rest of her family. The change
came as she was watching season 2 of the Biggest Loser and saw that,
through only diet and exercise, these extremely large people were able
to accomplish amazing things. Carol began working out at home and
changing her eating habits, and reached her goal weight of 120lbs.
without setting foot in a gym! She then started casually helping some
friends with their weight loss goals, which eventually inspired her to
make a career out of helping others lead healthier lives. She lives in Metairie with her
husband Roch and has two children, Vito and Lizzie.
